You only have to meet Anselme Selosse, one of the most outstanding personalities of Champagne and the world of wine, to realize that he has more than his wines to offer: it's a whole philosophy he shares with us about the relationship between man and nature.
An important point of this approach is the search for the ripeness of the grapes, another distinctive sign of Anselme Selosse's approach. If making champagne from perfectly ripe grapes is more common today, it has not always been so. In any case, the vine is still the most important: 100% of a wine's identity comes from the vine. When making wine, we can only lose, hide or destroy.
In the winery, as in the vineyard, Anselme Selosse is a perfectionist and spares no effort to express the identity of his wines. It is characterized by its freshness and sweetness, revealing great complexity.
Each disgorgement has its own idiosyncrasy and thus we can find fresher and other more oxidative versions within the same wine, besides the vintages used are different and that obviously sets its own stamp.
