Crus: priority is given to ten wines that come mainly from the southern and northern areas of the Reims mountain, including the famous Côte de Bouzy, in particular certain wines from Ambonnay, Bouzy, Louvois and Tours-sur-Marne.
Grapes from selected vineyards are chosen and destemmed before being put into barrels. Maceration, which lasts 48 to 72 hours after harvesting, allows the colour to be extracted and reflects the full aromatic richness of the Pinot Noir.
